Review: I was very recently diagnosed with Diabetes type 2. A lot of the information I received on diabetes was very overwhelming. Trying to get a grasp on what diabetes is all about, the tests, the diet, and not to mention the calorie, carb counting, I needed something to be straightforward. Betty came through once again. The cookbook is awesome in that it applies the diabetic information that is essential with some of the best recipes I have seen. Betty Crocker, you rock!WE JUST FOUND OUT A FEW WEEKS AGO THAT MY SWEET HUBBY HAS DIABETIES. SO I CAME HERE TO FIND A COOKBOOK TO HELP ME FEED HIM GOOD NUTRICIOUS MEALS. WHEN I RECIEVED IT I WAS SUPRISED TO FIND INFORMATION ABOUT DIABETES AND IT HELPED ME AND HIM TO BETTER UNDERSTAND HIS CONDITION. AS HIS DR. TOLD HIM, “YOU CAN EAT MOST ANYTHING, JUST WATCH YOUR CARBS AND SERVING SIZES, AND BE SURE TO WEIGHT AND MEASURE YOUR FOODS.” SO, HE HAS SO MANY CARBS AND CALORIES A DAY AND I TRY TO FIND THE BEST WAY TO “SPEND THEM” ON THE BEST FOODS. HE IS DOING GREAT ON THIS AND IT HELPS ME ALSO BY PUTTING THE NUMBER OF CARBS IN THE TOP CORNER OF EACH RECIPIE. YEAH!! NO HAVING TO FIGURE THAT OUT.

THERE ARE SOOO MANY GOOD RECIPIES IN HERE TOO. WE DO NOT USE SUGAR, WE USE SPLENDA IN EVERYTHING AND IT TASTES GREAT!! THIS COOKBOOK WAS AN ANSWER TO A PRAYER….I LOVE IT!!!! IT IS JUST AS THE COVER SAYS “EASY AS 1-2-3!!!”

I’ve read the mixed reviews on this product, and I feel like both are merited. If you’re new to cooking on a diabetic diet (or just a healthier diet), then this is a very good place to start. Recipes are simple and use everyday food items, and the nutrition content is included for every meal. If you’re more experienced, though, the recipes are more “food for thought” to provide ideas. There’s PLENTY of room to make them more nutritious–for example, one especially tasty-looking entry calls for a highly refined rice ingredient that provides very little nutritional value. Instead of using it as written, try substituting brown rice and adding your own seasonings (I use a brown and wild rice mixture and add thyme, shallots, etc.). The nice thing about this cookbook is that there’s plenty of flexibility to make a recipe “yours” by modifying ingredients to your own taste and nutritional preferences.There are good recipes as well as information about the diabetic diet in this cookbook. This is an excellent book. It has many yummy recipes that are easy to prepare. There is a catb content rating for each recipe. There is also a great deal of very useful information about diabetes and living with the disease. I would not hesitate to recommend this book.
